Queseria La Antigua hand-made unpasteurised Zamorano cheese cured with Tempranillo grapes round 250g wedge
Made from raw sheep's milk, this cheese that is over 12 months old has been matured with P.X Sweet Wine.
Round cheese, with a chocolate-colored rind (conferred by the wine bath). Hard paste, pressed, of medium-high consistency, closed with few eyes, white to ivory-white and moist. The predominant smell is that of wine. In the mouth, creamy and elastic texture, with a pleasant and slightly salty aroma. A peculiar, wide and generous flavor with a dry wine background. The combination of both products (cheese and wine) produces a sweet-sour sensation. Cheese made with an artisanal and long bath of the exceptional wine “Pedro Ximénez”. Its bark is edible.
INGREDIENTS: Unasteurised sheep's milk, natural rennet, calcium chloride, lactic ferments, lysozyme, salt and Pedro Ximénez sweet Malaga wine.
