This is an artisan-made unpasteurised Zamorano cheese made with saffron D.O.de la Mancha. With a curing period of between 4 and 6 months, generating a perfect balance of flavor.Within our range of specialties, a sheep cheese made with this spice so characteristic of our country could not be missing, the Saffron D.O.P de la Mancha. Infused during the manufacturing process with the raw sheep's milk with which we make their cheeses, the threads provide their characteristic color, as well as that bitter taste so typical of saffron.
