This is an artisan-made unpasteurised Zamorano cured with Fine Herbs round. It is made using solely the milk of Zamorana sheep, grazing the open grasslands of Zamora. The Zamorano rounds, with their characteristic basket-weave pattern, are cured for a minimum of 6-9 months, giving the cheese its full rounded flavour
