Vineyard
The vineyards are located on terraces along the steep slopes of the rivers Sil and Bibei at between 350 and 500 metres above sea level. Soils consist of decomposed sandy schist. The climate is continental, although proximity to the Atlantic Ocean makes this area more humid and rainy than most of Spain, with around 800 mm each year.
Viticulture
The vines are between 15 to 70 years old. Viticulture is organic and the vines are untrained and worked manually.
Vinemaking
The grapes undergo fermentation in stainless steel and plastic tanks with indigenous yeasts. They are then aged in old barrels, mainly 500l demi-muids before being bottled unfined and unfiltered.
