La Mancha, a large area of land that has a flat land, without great heights and with a beautiful reddish earth, fruit of sediments from the Miocene of limestone structure. Its temperatures are extreme due to its continental climate, ranging between -15º in cold winter and 45º in hot summer. Dryness is another of its most pronounced characteristics, since due to its micro-climate it prevents the entry of humid winds, presenting low rainfall (300 to 400 mm per year), for this reason La Mancha is fundamentally a dry farming place. On the other hand, our land enjoys 3,000 hours of sunshine a year to brown.
Viticulture
Viticulture is sustainable.
Vinemaking
Rigorous monitoring in the vineyard which end with the harvest in its optimal point of maturation. The varietal wines are being recieved and processed separately. After crushing and destemming, the fermetation process starts in stainless stell tanks with controlled temperature to ensure a greater extraction of flavor, color and the best qualities of varieties.
The filtering, blending, stabilization and bottling process start inmediately after concluding the fermetation.
