The key to Mariano Gomez's superb hams is a long and natural drying process in the cool, dry Zaragoza climate, without too much salt.
Too often, in modern ham production, vast quantities of salt are used to accelerate the curation process, allowing manufacturers to significantly shorten drying times and speed up production.
Mariano Gomez has been making hams for generations and don't cut corners when it comes to curation. These hams are slow dried for 20 months (depending on precise size) with a minimum of salt. The result is an exceptional, subtle flavour and pleasing aroma.
