This EVOO is obtained from the juice of olives of the Hojiblanca variety, very characteristic of Andalusia, found mainly in the provinces of Seville, southern Córdoba and Malaga. In these areas, they collect only those fruits that meet the properties that we consider essential to obtain a very high quality Extra Virgin.
An early harvest is made of the olives, with which we manage to produce a higher quality EVOO and thus guarantee the conservation of its organoleptic properties.

The Hojiblanca La Chinata variety is known for its vegetable flavor with sweet touches at the beginning of its tasting, leaving a slight itch in the throat and a final aftertaste of almonds. Also, its aroma is reminiscent of fresh fruit, such as freshly cut grass, and white flowers.
It is the ideal EVOO variety for oily fish such as tuna or salmon, as well as for meat or fish carpaccios.
