Fillets of Mediterranean mackerel in tomato sauce are a rich, sweet, salty treat – fantastic served on crusty sourdough toast, or made into a punchy pasta sauce. The mackerel fillets arrive fresh, and are cleaned and de-boned by hand, so very easy to prepare at home. The rich sauce is made with tomatoes from Andalucía in Southern Spain.
For something a little more special, serve these Mediterranean mackerel fillets on a bed of rich and buttery polenta scattered with fresh parsley.
