This morcilla is made with rice and flavoured with cumin
We bring you this speciality black pudding from Burgos in Castilla y Leon, one of the highest cities in Spain. It is made with rice, delicately flavoured with cumin, and is delicious! Slice carefully into chunky coins and fry lightly. Serve as a tapa on toast, or with fried eggs for breakfast. Or serve with some sauteed spring vegetables, like tiny broad beans.
