Pago de Carraovejas
The Pago de Carraovejas Crianza is a genuine icon among Ribera del Duero wines, it's the only way to explain why it runs out every year, a few months after being released onto the market. Its faithful fans eagerly await the new vintage, delighted by its now classic lactic volume and its immense fruit expression.
Its grapes grow on vines rooted in soils that combine limestone with red clay and white marl. The harvest is carried out manually using small crates, and the grapes are taken to a cold-storage room to be transferred later by gravity to the fermentation tanks, French oak vats and some small stainless steel tanks; the using of native yeasts will enable maximum expression of the terroir's characteristics and the singularity of each vintage. Again conveyed by gravity, the wine is transferred to American and French oak barrels, in which it will be matured for a year. Clarified with natural egg white and bottled by gravity with a select natural cork stopper, the now finished Pago de Carraovejas Crianza will continue to rest for a few more months in cellar before reaching the market.
This totally sensitive approach to its production is finally reflected in a distinguished wine that appears a lovely purple colour with attractive tears. Aromas of red fruits, spices, liquorice, blue flowers and woodland hints define its nose, whilst on the palate there's an assertive lactic element, with creamy toast and very fine, silky-textured tannins. A flavoursome wine, juicy and very well-balanced, with well-judged acidity and a persistent finish in which the hints of ripe fruit and the oak's toasty notes blend together nicely.
