Vineyard
Penapedre comes from the Laderas del Miño region of Ribeira Sacra. Vines are over 100 years old, with southern exposure facing towards the river. Soils are granite, and fruit ripens early.
Viticulture
Vineyards are fully organic and he uses some biodynamic methods.
Vinemaking
The grapes are hand picked, then whole bunches are foot trodden. The wine is then fermented in 4,000 litre chestnut foudre with a long maceration. It is aged for 12 months in used 500 litre French oak barrels. It is not clarified.
